  • 2 pieces ripe avocados Choose firm yet gently yielding avocados.
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh mozzarella balls (bocconcini) or cubed mozzarella Use your preferred type of mozzarella.
  • ½ cup fresh basil leaves, chopped
  • 2 tablespoons balsamic glaze Optional but recommended for flavor.
  • to taste salt and pepper Season according to preference.

Preparation

  • Cut the avocados in half lengthwise and remove the pit. Scoop out a bit of the flesh to create more room for filling.
  • In a mixing bowl, combine the halved cherry tomatoes, fresh mozzarella, and chopped basil. Drizzle balsamic glaze, season with salt and pepper, and gently toss.
  • Stuff the avocado halves with the mixture using a spoon.
  • Drizzle more balsamic glaze on top if desired, then serve and enjoy!

Notes

Choose avocados that are firm yet yielding. You can customize this recipe by adding crushed red pepper or arugula. Store leftovers in an airtight container in the fridge for up to two days.
