  • 1 pound calamari, cleaned and sliced into rings
  • 2 cups mixed salad greens (e.g., arugula, spinach)
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, sliced (for crunch)
  • 1/4 medium red onion, thinly sliced (adds a lovely zing)

Dressing

  • 2 tablespoons olive oil (the good stuff)
  • 1 tablespoon lemon juice (freshly squeezed for best flavor)
  • 1 teaspoon garlic powder (can be substituted with fresh minced garlic)
  • Salt and pepper (to taste)

Preparation

  • Boil a pot of water. Add the calamari rings and cook for about 2-3 minutes until they turn opaque. Drain and set aside.
  • In a large bowl, combine the mixed salad greens, cherry tomatoes, cucumber, and red onion.
  • In a small bowl, whisk together the olive oil, lemon juice, garlic powder, salt, and pepper.
  • Add the cooked calamari to the bowl of veggies and pour the dressing over the top. Give everything a gentle toss.
  • Enjoy immediately for the best flavor!

Notes

If you're not a fan of garlic powder, feel free to substitute fresh minced garlic. Store leftovers in an airtight container in the fridge for up to 2 days, keeping dressing separate until ready to eat. Grilling or pan-searing the calamari can add extra flavor.
