Pasta and Sausage

  • 8 oz pasta (penne or rotini)
  • 1 lb Andouille sausage, sliced or your favorite sausage

Vegetables

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 1 bell pepper, diced any color
  • 3 cloves garlic, minced

Sauce Ingredients

  • 1 can (14.5 oz) diced tomatoes
  • 1 cup heavy cream for that luscious sauce
  • 1 tablespoon Cajun seasoning adjust to your heat preference
  • Salt and pepper to taste
  • Fresh parsley for garnishing

Cooking Steps

  • Begin by boiling your choice of pasta according to the package instructions. Save a cup of pasta water before draining the rest.
  • In a large skillet, heat the olive oil over medium heat. Add the sliced Andouille sausage and cook until browned, about 5-7 minutes.
  • Toss in the diced onion, bell pepper, and minced garlic. Sauté everything together for another 5 minutes, until the vegetables are soft.
  • Dump in the can of diced tomatoes (juice and all) and sprinkle in your Cajun seasoning, stirring until well combined.
  • Reduce the heat to low and pour in the heavy cream. Mix everything well, allowing it to simmer for about 5 minutes. If the sauce is too thick, add a little pasta water until you achieve the desired consistency.
  • Add the cooked pasta to the skillet and toss everything together. Season with salt and pepper to your liking, then top with fresh parsley.

Notes

Feel free to add veggies like spinach, zucchini, or frozen peas to your pasta. For a spicier kick, include cayenne or crushed red pepper flakes. Don't skip the cream for an extraordinary flavor!
