Ingredients
  

For the Salmon and Shrimp

  • 2 fillets salmon fillets (about 6 oz each)
  • 8 medium shrimp, peeled and deveined
  • 1 tablespoon Cajun seasoning Adjust according to taste—more spice, more fun!
  • 2 tablespoons butter Butter makes everything better
  • 2 cloves garlic, minced
  • 1 juice lemon Use fresh lemon for the best flavor

For the Roasted Broccoli

  • 2 cups fresh broccoli florets
  • 1 tablespoon olive oil
  • to taste salt and pepper

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C) for roasting the broccoli.
  • On a baking sheet, toss the broccoli florets with olive oil, salt, and pepper. Spread them out evenly.

Cooking

  • Roast the broccoli for about 15-20 minutes, or until tender and slightly crispy.
  • While the broccoli is roasting, rub the salmon fillets with Cajun seasoning.
  • In a frying pan over medium heat, melt 1 tablespoon of butter. Once melted and bubbling, add the salmon skin-side down. Cook for 5-6 minutes until golden brown.
  • Flip the salmon and cook for an additional 3-4 minutes until cooked through.
  • Add the remaining butter and minced garlic to the same pan. Once fragrant, toss in the shrimp and cook for 2-3 minutes until pink and opaque. Squeeze in lemon juice.

Serving

  • Plate the salmon alongside the shrimp with the roasted broccoli on the side. Drizzle any leftover buttery goodness over everything.

Notes

Feel free to swap out the broccoli for your favorite veggies like asparagus or green beans. Add a splash of white wine to the shrimp for a fancy touch.
