  • 1 loaf French baguette or your favorite crusty bread
  • 8 oz burrata cheese substitute with mozzarella if necessary
  • 1 cup cherry tomatoes diced
  • 2 cloves garlic minced
  • 2 tablespoons fresh basil chopped
  • 2 tablespoons olive oil
  • to taste Salt and pepper
  • to taste Balsamic glaze optional

Preparation

  • Preheat your oven to 400°F (200°C).
  • Cut the baguette into 1-inch thick slices.
  • Arrange the slices on a baking sheet and brush them lightly with olive oil.
  • Toast the bread in the oven for about 5-7 minutes until golden brown and crispy on the edges.

Topping

  • In a mixing bowl, combine the diced cherry tomatoes, minced garlic, chopped basil, olive oil, salt, and pepper. Mix well.
  • Once the baguette slices are out of the oven and cooled slightly, top each slice with a spoonful of the tomato mixture.
  • Tear the burrata into chunks and place a piece on top of each bruschetta.
  • Drizzle with balsamic glaze if using.

Notes

The tomato mixture can be made a few hours in advance; store separately from the bread to avoid sogginess. Substitute ingredients based on seasonality or preference.
