  • 1 cup unsalted butter Browned
  • 3/4 cup brown sugar Packed
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1-2 tablespoons coffee granules Instant, adjust for desired flavor
  • 1 cup toffee bits Or chopped candies

Preparation

  • Brown the butter in a saucepan over medium heat, stirring occasionally until it turns golden brown and has a nutty aroma, about 5-7 minutes. Avoid burning it.
  • In a large bowl, mix the browned butter, brown sugar, and granulated sugar until blended. Add the egg and vanilla extract, and mix until smooth.
  • In another bowl, whisk together the flour, baking soda, salt, and coffee granules. Gradually mix this into the wet ingredients until just combined.
  • Fold in the toffee bits to add crunch and sweetness.
  • (Optional) Chill the dough in the fridge for at least 30 minutes to intensify flavors and improve chewiness. You can bake immediately if desired.
  • Preheat your oven to 350°F (175°C). Drop rounded scoops of dough onto a lined baking sheet, spacing them about 2 inches apart.
  • Bake for 10-12 minutes until the edges are slightly crispy and centers appear soft. Let them cool on the baking sheet before transferring to a wire rack.

Notes

For a stronger coffee flavor, double the coffee granules. Store cookies in an airtight container at room temperature for up to a week, or freeze for longer storage.
