Ingredients
  

For the Salad

  • 4 cups fresh broccoli florets
  • 1 cup shredded carrots
  • 1 cup red grapes, halved or raisins if preferred
  • 1/2 cup crumbled feta cheese
  • 1/2 cup sunflower seeds for added crunch

For the Dressing

  • 1/2 cup Greek yogurt or sour cream if preferred
  • 2 tablespoons honey
  • 1 tablespoon apple cider vinegar
  • to taste Salt and pepper

Instructions
 

Preparation

  • Wash the broccoli florets thoroughly and chop them into smaller pieces.
  • In a large mixing bowl, combine the broccoli, shredded carrots, grapes (or raisins), feta cheese, and sunflower seeds.

Making the Dressing

  • In a separate small bowl, whisk together the Greek yogurt, honey, apple cider vinegar, salt, and pepper.

Combine and Chill

  • Pour the dressing over the salad mixture and toss everything together until well coated.
  • If desired, let the salad chill in the fridge for about 30 minutes before serving.

Notes

You can add grilled chicken or chickpeas for extra protein. Feel free to customize the ingredients to your taste!
