  • 2 tablespoons olive oil For searing the ribs.

  • 3 cloves minced garlic Essential for comfort food.
  • 2 cups red wine Choose a bottle you would enjoy drinking.
  • 2 cups beef broth Liquid gold for braising.
  • 2 tablespoons tomato paste Adds acidity and depth.
  • 2 sprigs fresh thyme For added fragrance.
  • 1 leaf bay leaf Enhances the overall flavor.

Preparation

  • Start by seasoning your beef short ribs generously with salt and pepper.
  • Heat olive oil in a large Dutch oven over medium-high heat. Add the short ribs and sear on all sides until beautifully browned, about 8-10 minutes.
  • Remove the ribs and set them aside.
  • In the same pot, add chopped onions, carrots, and celery. Sauté for about 5 minutes until softened, then add minced garlic for another minute.
  • Pour in red wine to deglaze, scraping up browned bits, then add beef broth, tomato paste, thyme, and bay leaf.
  • Return short ribs to the pot, nestling them into the liquid.
  • Cover and transfer to a preheated oven at 325°F (160°C). Let braise for about 2.5 to 3 hours.
  • Once tender, remove bay leaf and thyme sprigs before serving.
  • Serve with creamy mashed potatoes or over buttery egg noodles.

Notes

For best results, use wine that you enjoy drinking. If the sauce is too thin, simmer on the stove to reduce it. This dish can be made in advance and tastes even better the next day.
