Ingredients
  

For the Crust

  • 1.5 cups graham cracker crumbs
  • 1/3 cup sugar
  • 1/2 cup unsalted butter, melted

For the Cheesecake Filling

  • 32 oz cream cheese, softened (4 packages)
  • 1 cup sugar
  • 1 cup sour cream
  • 4 large eggs
  • 1 teaspoon vanilla extract

For the Topping

  • 1 cup heavy cream
  • 8 oz semisweet chocolate, chopped
  • 1/2 cup sugar
  • 2 tablespoons unsweetened cocoa powder

For Garnishing

Instructions
 

Preparation of the Crust

  • Preheat your oven to 325°F (160°C) and lightly grease a 9-inch springform pan.
  • In a bowl, mix together the graham cracker crumbs, sugar, and melted butter until everything is well combined.
  • Press this mixture firmly into the bottom of your prepared pan. Bake for 10 minutes and then let cool.

Making the Cheesecake Filling

  • In a large mixing bowl, beat the softened cream cheese until smooth.
  • Gradually add the sugar and mix until light and fluffy, about 3-4 minutes.
  • Add in the sour cream, then the eggs one at a time, mixing thoroughly after each addition. Finish with the vanilla extract.

Baking the Cheesecake

  • Pour the cheesecake filling onto the cooled crust and smooth the top.
  • Bake for 50-60 minutes, or until the top is set and slightly golden.
  • Allow the cheesecake to cool in the pan for about an hour before transferring it to the refrigerator. Chill for at least 4 hours (or overnight if you can wait that long!).

Preparing the Decadent Chocolate Ganache

  • In a medium saucepan, heat the heavy cream until it’s just about to simmer. Remove from heat.
  • Add in the chopped chocolate and stir until melted and smooth. Sprinkle in the sugar and cocoa powder for added sweetness and richness.

Assembling the Cheesecake

  • Once the cheesecake is chilled, pour the chocolate ganache over the top and spread it gently with a spatula.
  • If desired, whip some cream and dollop it on top with chocolate shavings for that 'wow' factor!

Notes

If your cheesecake cracks while baking, top it off generously with ganache—it’s like putting a Band-Aid on a scraped knee! Leftovers can be refrigerated for up to 5 days.
