  • 1 piece Boneless prime rib roast (about 4 to 5 pounds)
  • 4 cloves Garlic (minced)
  • 2 tablespoons Fresh rosemary (chopped)
  • 2 tablespoons Fresh thyme (chopped)
  • 1 tablespoon Olive oil
  • to taste none Salt and pepper

Preparation

  • Start by taking the prime rib out of the fridge and letting it come to room temperature for about 30-45 minutes.
  • In a small bowl, mix together the minced garlic, rosemary, thyme, olive oil, salt, and pepper. Rub this mixture all over the roast.

Cooking

  • Preheat your oven to 450°F (232°C).
  • Place the roast on a rack in a roasting pan and sear the exterior in the oven for 15 minutes.
  • Turn the temperature down to 325°F (163°C) and cook until the internal temperature reaches 130°F (54°C) for medium-rare.
  • Once out of the oven, cover the roast loosely with aluminum foil and let it rest for 20 minutes.

Notes

Resting the meat is crucial for juicy slices. Experiment with herbs or add chili flakes for added flavor. Leftovers are excellent for sandwiches or reheating.
