  • 1 cup fresh blueberries or frozen if that’s what you’ve got
  • 2-3 tablespoons honey adjust sweetener to your liking
  • 1 teaspoon vanilla extract
  • 1 pinch salt because salt makes everything better!

Preparation

  • Start by rinsing the vibrant blueberries under cool water.
  • In a bowl, combine your Greek yogurt with honey, vanilla extract, and a pinch of salt. Stir until everything’s combined.
  • Gently fold in the blueberries into your yogurt mixture, being careful not to mash them completely.
  • Line a mini muffin tin with paper liners or grease it lightly. Spoon the yogurt mixture into each cup, filling them about three-quarters full.

Freezing

  • Place the muffin tin in the freezer for at least 3-4 hours, or until they’re solid.

Serving

  • Once frozen, pop the bites out of the tin and store them in an airtight container.

Notes

Feel free to mix up the berries! Adjust your honey or use maple syrup for a different flavor profile. Serve with blueberry sauce to impress guests.
