Ingredients
  

For the Crust

  • 1 ¾ cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 1/4 tsp salt

For the Blueberry Curd

  • 1 cup fresh blueberries (or frozen) Use fresh if possible for best flavor.
  • 3 large eggs
  • 3/4 cup granulated sugar
  • 1/4 cup fresh lemon juice
  • 4 tbsp unsalted butter, cut into pieces
  • Zest of 1 lemon
  • 2 tbsp cornstarch
  • A pinch of salt

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a mixing bowl, combine the flour, powdered sugar, and salt. Add the softened butter and mix until it resembles coarse crumbs.
  • Press this mixture into a greased 9×9-inch baking pan evenly and bake for about 15 minutes or until lightly golden.

Making the Blueberry Curd

  • In a saucepan, combine the fresh blueberries, granulated sugar, lemon juice, and zest. Cook over medium heat until the blueberries start to break down.
  • Transfer the mixture into a blender and pulse until smooth. Optionally, strain through a fine mesh sieve to remove skins.
  • In a separate bowl, whisk together the eggs, cornstarch, and salt. Gradually introduce the blueberry mixture while whisking constantly.
  • Stir in the butter pieces until they melt and blend in fully.

Baking and Cooling

  • Pour the blueberry curd over the pre-baked crust and return it to the oven. Bake for another 25-30 minutes, or until the center is set.
  • Let cool completely in the pan on a wire rack, then slice into bars.

Notes

Fresh blueberries yield the best flavor. A light dusting of powdered sugar before serving adds a nice touch. These bars can be stored in the fridge for up to a week or frozen for three months.
