  • 1 cup almond milk (or any milk of your choice)
  • 1/4 cup chia seeds
  • 2 tablespoons maple syrup (or honey) use honey if you prefer a sweeter option
  • 1 teaspoon vanilla extract

Toppings

  • 1 cup fresh blueberries reserve a few for topping
  • to taste cinnamon for added flavor

Preparation

  • In a mixing bowl, combine the almond milk, chia seeds, maple syrup, and vanilla extract. Stir well.
  • Cover the bowl and refrigerate for about 2 hours or overnight.
  • Once the mixture is set, gently fold in the blueberries.
  • Spoon the chia seed pudding into glasses or bowls. Top with additional blueberries and a sprinkle of cinnamon if desired.

Notes

For a tropical twist, substitute almond milk with coconut milk. This pudding can be mixed with other fruits, nuts, or granola for added texture. Leftovers can be stored in an airtight container in the fridge for up to 5 days.
