For the filling

  • 2 cups fresh blackberries Use fresh for the best flavor.
  • 1/4 cup lime juice Freshly squeezed is always best!
  • 1/2 cup sugar Adjust to your sweetness preference.
  • 1 tablespoon cornstarch To help your filling hold together.
  • 1 teaspoon vanilla extract The secret ingredient for a warm hug in each bite.
  • a pinch salt

For the crust

  • 1 crust Crust of your choice Store-bought or homemade; we won’t judge!

Preparation

  • Preheat oven and bake store-bought crust according to package instructions or make a simple graham cracker crust and bake until golden. Let it cool.
  • In a medium saucepan over medium heat, combine blackberries, lime juice, sugar, cornstarch, vanilla extract, and salt. Stir well and cook until bubbly and thickened, about 5-7 minutes.
  • Remove filling from heat and pour it into the cooled crust. Spread evenly.
  • Chill in the refrigerator for at least two hours.

Serving

  • Once chilled, cut into slices and serve with whipped cream or zest.

Notes

Fresh blackberries are ideal, but frozen will work too—just thaw and drain first. For a more intense lime flavor, add more juice or zest. For homemade crust, use 1 ½ cups crushed graham crackers, 1/3 cup sugar, and 1/2 cup melted butter.
