Ingredients

For the Black Bean Burger Patties

  • 1 can (15 oz) black beans, drained and rinsed
  • ½ cup breadcrumbs can use gluten-free
  • 1 whole egg or flax egg for a vegan option
  • 1 tsp garlic powder
  • 1 tsp cumin
  • ½ tsp chili powder adjust to taste
  • Salt and pepper to taste

For Assembling the Bowls

  • 1 whole avocado, sliced
  • ½ cup cherry tomatoes, halved
  • 1 cup shredded lettuce or greens of your choice
  • ½ cup corn fresh, frozen, or canned
  • Optional toppings salsa, cheese, or sour cream

Instructions

Preparation

  • Prep Your Kitchen: Start by setting up your cooking space. Tidying up a bit will help make everything run smoothly.
  • Mix the Ingredients: In a large mixing bowl, mash the black beans with a fork or potato masher until they’re a chunky paste. Add the breadcrumbs, egg (or flax egg), garlic powder, cumin, chili powder, and a sprinkle of salt and pepper. Mix until combined.
  • Form the Patties: With your hands, form patties from the mixture, aiming for about four to six patties.

Cooking

  • Cook the Patties: Heat a non-stick skillet over medium heat and add about 1 tablespoon of oil. Cook the patties for 5-7 minutes on each side until golden brown.

Assembly

  • Assemble Your Bowls: Start with a layer of shredded lettuce, add the black bean burger patty, then top with avocado slices, cherry tomatoes, and corn. Drizzle with salsa or your favorite dressing.

Notes

Make Ahead: These patties freeze un-cooked for quick meals. Don't stress over perfection; if they fall apart, call them 'deconstructed'!
