Ingredients
  

For the crust

  • 1.5 cups 1 ½ cups of graham cracker crumbs
  • 0.25 cups ¼ cup of sugar
  • 0.5 cups ½ cup of butter, melted

For the cheesecake filling

  • 32 ounces 4 packages (8 ounces each) of cream cheese, softened
  • 1 cups 1 cup of sugar
  • 1 teaspoon 1 teaspoon of vanilla extract
  • 4 large 4 large eggs

For the strawberry swirl

  • 1 cups 1 cup of fresh strawberries, pureed
  • 0.25 cups ¼ cup of sugar (for the strawberry swirl)

Instructions
 

Preparation

  • Preheat your oven to 325°F (160°C).
  • In a bowl, mix the graham cracker crumbs, ¼ cup of sugar, and melted butter until combined. Press this mixture firmly into the bottom of a 9-inch springform pan. Bake for about 10 minutes, then let it cool.
  • In a large bowl, beat the softened cream cheese until smooth. Gradually add in 1 cup of sugar and beat until fluffy. Mix in 1 teaspoon of vanilla extract, then add the eggs one at a time, stirring gently after each addition until combined.

Strawberry Swirl

  • In a separate bowl, combine the pureed strawberries with ¼ cup of sugar.

Assembly

  • Pour half of the cheesecake batter into the prepared crust. Add dollops of the strawberry mixture over the batter and use a knife to swirl it gently. Pour in the remaining cheesecake batter and repeat with the strawberry mixture, swirling as you go.

Baking

  • Place the springform pan in the oven and bake for 55-60 minutes or until the edges are set but the center still has a slight jiggle.

Cooling

  • Once baked, turn off the oven and let the cheesecake cool inside for an hour with the oven door slightly ajar. Refrigerate for at least 4 hours (or overnight) before serving.

Notes

For an eye-catching presentation, try tossing some whole strawberries on top before serving. Don't worry if your swirl doesn't look perfect—this cheesecake is all about the flavors! Consider making a coffee swirl cheesecake for an added twist.
