Main Ingredients

  • 1 whole whole turkey (10-12 pounds)
  • 1 cup unsalted butter, softened
  • 3 tablespoons kosher salt
  • 1 tablespoon black pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon dried thyme
  • 1 tablespoon dried rosemary
  • 2 cups low-sodium chicken broth

For Stuffing

  • Fresh herbs (thyme, rosemary, parsley) for stuffing
  • Lemon or orange slices optional for added flavor

Preparation

  • Thaw your turkey if frozen, which can take several days in the refrigerator. Remove neck and giblets from the cavity and pat the turkey dry with paper towels.

Seasoning

  • Combine softened butter, salt, pepper, garlic powder, onion powder, thyme, and rosemary in a bowl. Rub this mixture all over the turkey, including under the skin.

Stuffing

  • Place fresh herbs and citrus slices inside the turkey cavity.

Roasting

  • Preheat your oven to 325°F (165°C). Place the turkey on a rack in a roasting pan, breast side up, and pour chicken broth in the bottom of the pan.
  • Tent the turkey with aluminum foil and roast for about 13-15 minutes per pound until the internal temperature reaches 165°F (73.9°C) in the thickest part of the thigh.
  • Remove the foil 30 minutes before the turkey is done to allow the skin to brown.

Resting

  • Remove the turkey from the oven and let it rest for at least 30 minutes.

Notes

Consider spatchcocking the turkey for faster cooking. Save the drippings for gravy by whisking in flour or cornstarch.
