  • 1 cup fresh blueberries

Preparation

  • Preheat your oven to 400°F (200°C).
  • Season your chicken breasts with salt and pepper on both sides.

Cooking

  • In a large oven-safe skillet, heat the olive oil over medium-high heat.
  • Add the chicken breasts and sear for about 4-5 minutes on one side until golden, then flip and cook for another 2-3 minutes.
  • Add the fresh blueberries and thyme leaves to the skillet.
  • Drizzle the balsamic vinegar and honey over the chicken and blueberries.
  • Transfer the skillet to the preheated oven and bake for 15-20 minutes until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  • Remove from the oven, let the chicken rest for a few minutes, and serve with a sprinkle of extra thyme and blueberry juices.

Notes

You can substitute blueberries with raspberries or peaches. For leftovers, store in an airtight container in the fridge for up to three days and reheat gently.
