  • In a large skillet, heat the olive oil over medium-high heat.
  • Add the sliced beef, seasoning it with salt and pepper, and cook until browned. Remove the beef from the pan and set it aside.
  • In the same skillet, toss in the chopped onion and cook until soft and translucent.
  • Add the mushrooms and garlic, stirring constantly until fragrant and mushrooms are browned.
  • Sprinkle flour over the vegetable mixture, and stir for about a minute to cook out the raw flavor.
  • Gradually pour in the beef broth, mixing well to avoid any lumps.
  • Return the beef to the skillet, and let it simmer for about 5-10 minutes until the sauce thickens.
  • Remove the skillet from the heat and stir in the sour cream until fully combined.
  • Garnish with fresh parsley before serving.

Notes

For a thicker sauce, let it simmer a bit longer, stirring frequently. Consider adding spinach or bell peppers for extra nutrients.
