Ingredients
  

For the Cake

  • 2 to 3 pieces ripe bananas The browner, the better!
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts Optional

For the Cream Cheese Frosting

  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease and flour a 9x13-inch baking pan.
  • In a bowl, mash the ripe bananas until smooth.

Mixing

  • In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
  • Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  • In a separate bowl, whisk together the flour, baking soda, and salt.
  • Slowly add the dry mixture to the wet ingredients, alternating with the mashed bananas. Gently fold in the walnuts.

Baking

  • Pour the batter into the prepared baking pan, smooth the top, and bake for 25 to 30 minutes, or until a toothpick inserted in the center comes out clean.

Frosting

  • Once the cake has cooled completely, beat the cream cheese and butter until smooth. Gradually add the powdered sugar and vanilla, mixing until well combined.
  • Spread the frosting generously over the cooled cake.

Notes

For better flavor, use very ripe bananas. You can skip the frosting for a lighter version; a dusting of powdered sugar works great too!
