Ingredients
  

For the pastry

  • 1 package store-bought puff pastry (thawed) Ensure pastry is fully thawed

For the filling

  • 1/2 cup almond paste
  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter, softened

For assembly

  • 1 large egg (for egg wash)
  • slivered almonds (for topping) Add for extra crunch
  • powdered sugar (for dusting) Dust before serving

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a mixing bowl, combine almond paste, granulated sugar, and softened butter until well blended.
  • On a lightly floured surface, unfold and roll out your puff pastry sheets to ensure they are thin.
  • Cut the pastry into triangles, approximately 4 inches wide at the base.

Filling and Shaping

  • Spread a tablespoon of almond filling on the base of each triangle.
  • Roll up the triangle tightly from the base to the tip and tuck the tip underneath.

Baking

  • Beat the egg and brush it over the croissants.
  • Sprinkle slivered almonds on top of each croissant.
  • Arrange croissants on a parchment-lined baking sheet and bake for about 20-25 minutes until puffed and golden brown.
  • Remove from the oven and let cool slightly before dusting with powdered sugar.

Notes

Make sure the puff pastry is completely thawed. You can customize the filling by adding chocolate chips or orange zest. These croissants make wonderful gifts.
