  • 1 medium spaghetti squash
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Your favourite sauce (like marinara, pesto, or a creamy alfredo)
  • Grated cheese (optional) Optional, but who can resist?

Preparation

  • Preheat your oven to 400°F (200°C). While the oven heats up, grab your spaghetti squash.
  • Cut the squash in half lengthwise.
  • Scoop out the seeds using a spoon.
  • Drizzle olive oil over the cut sides of the squash, and season with salt and pepper.

Cooking

  • Place the squash cut-side down on a baking sheet lined with parchment paper.
  • Bake for approximately 30-35 minutes, or until the flesh is tender and can be easily pierced with a fork.
  • Once baked, let it cool for a few minutes.
  • Take a fork and gently scrape the flesh to create those lovely 'spaghetti' strands.
  • Top with your sauce of choice and sprinkle some grated cheese on top if desired.

Notes

If your squash is particularly stubborn while cutting, you can microwave it for a few minutes to soften it up. Use whatever sauce you like! Keep it simple or go extravagant with a rich marinara. Mixing in some ricotta or mozzarella before baking can elevate the dish.
