  • 1 lemon Juice of 1 lemon Freshly squeezed for the best flavor.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C). This can be done while you prepare your ingredients.
  • Cut two large pieces of aluminum foil, ensuring they are big enough to wrap around the salmon and asparagus without leaving open edges.
  • Lay the trimmed asparagus in the center of each foil sheet.
  • Season the asparagus with a pinch of salt and pepper.
  • Place each salmon fillet on top of the asparagus.
  • Drizzle the melted butter, minced garlic, lemon juice, and lemon zest over the salmon.
  • Carefully fold the edges of the foil together to create a tight seal.

Cooking

  • Place the foil packets on a baking sheet and bake for 15-20 minutes.
  • Carefully open the packets, watching for hot steam, and transfer everything to a plate.
  • Garnish with fresh parsley before serving.

Notes

You can substitute the salmon with any sturdy fish like halibut or trout. Store any leftovers in an airtight container for up to 2 days. This dish can be prepped in advance and stored in the fridge until ready to bake.
