Ingredients
  

Main Ingredients

  • 4 large large eggs
  • 8 oz block of feta cheese Approximately 1 block
  • 2 cups cherry tomatoes
  • 2 cups fresh spinach
  • 2 tablespoons olive oil For greasing baking dish
  • to taste Salt and pepper
  • Optional: fresh herbs like basil or parsley for garnish

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Drizzle 2 tablespoons of olive oil in a baking dish.
  • Scatter the cherry tomatoes on the bottom of the dish.
  • Crumble the block of feta cheese in the center of the tomatoes.
  • Sprinkle with salt and pepper.
  • Crack the eggs on top of everything.
  • Toss the fresh spinach around the edges of the dish.

Cooking

  • Bake in the preheated oven for about 20-25 minutes, or until eggs are set to your preference.
  • Once out of the oven, garnish with fresh herbs if desired.

Notes

Don't skip the olive oil for flavor and to prevent sticking. Feel free to customize with other veggies and cheese variations.
