Ingredients
  

For the burritos

  • 2 cups shredded cooked chicken Using rotisserie chicken for time-saving.
  • 1 cup cooked rice White, brown, or cauliflower rice.
  • 1 can black beans 15 oz, drained and rinsed.
  • 1 cup corn kernels Frozen or canned.
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • to taste salt and pepper
  • 4 large flour tortillas
  • 1 cup shredded cheese Cheddar, Monterey Jack, or a blend.

For the sauce and garnish

  • 1 can green chili sauce 10 oz.
  • 1 tablespoon sour cream Optional topping.
  • to taste fresh cilantro For garnish.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large bowl, combine shredded chicken, cooked rice, black beans, corn, cumin, chili powder, salt, and pepper. Mix until fully combined.
  • Lay a tortilla on a flat surface. Scoop about 1/4 of the chicken mixture onto the center of the tortilla, sprinkle with cheese, and roll it up securely.
  • Place the rolled burrito seam side down in a greased baking dish. Repeat until all burritos are assembled.

Baking

  • Pour green chili sauce evenly over the burritos, followed by a sprinkle of leftover cheese.
  • Cover the dish with foil and bake for 20 minutes. Then remove the foil and bake for another 10 minutes until the cheese is melted and bubbly.
  • Garnish with sour cream and cilantro. Slice and serve.

Notes

Feel free to customize your burrito filling with leftover veggies or different beans. These burritos freeze well—make a double batch and enjoy later!
