Ingredients
  

For the Burritos

  • 2 cups cooked, shredded chicken store-bought rotisserie chicken works beautifully
  • 1 cup black beans drained and rinsed
  • 1 cup corn frozen or canned
  • 1 cup salsa for flavor
  • 1 cup shredded cheese cheddar, Monterey Jack, or blend of your favorite cheeses
  • 4 large flour tortillas

For the Cheesy Green Chili Sauce

  • 1 cup sour cream
  • 1 can diced green chilies 4 ounces
  • 1 cup shredded cheese more cheese!
  • 1 teaspoon garlic powder
  • 1 pinch salt
  • 1 pinch pepper

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, mix together the shredded chicken, black beans, corn, salsa, and shredded cheese.
  • Grab a tortilla and scoop about 1/4 of the filling mixture into the center. Fold the sides over the filling, then roll it up tightly from the bottom. Repeat with all the tortillas.
  • Place the burritos seam-side down in a greased baking dish.

Make the Sauce

  • In a mixing bowl, whisk together the sour cream, diced green chilies, shredded cheese, garlic powder, salt, and pepper until well combined.

Baking

  • Pour the green chili sauce over the burritos in the baking dish and sprinkle a little extra cheese on top.
  • Bake for about 20-25 minutes or until everything is bubbly and golden.

Serving

  • Remove them from the oven, let them cool for a few minutes, then serve with your favorite toppings.

Notes

These burritos freeze wonderfully, so feel free to make a double batch. You can substitute chicken with ground turkey or vegetables for a vegetarian twist.
