- ½ cup Baileys Irish Cream
Frosting Ingredients
- ½ cup unsalted butter, softened
- ⅔ cup unsweetened cocoa powder
- 3 cups powdered sugar
- ⅓ cup whole milk
- 1 teaspoon vanilla extract
- ¼ cup Baileys Irish Cream
Instructions
Preparation
- Preheat your oven to 350°F (175°C) and grease and flour a jellyroll or sheet pan.
- In a large bowl, stir together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
- Add the eggs, milk, oil, and vanilla extract to the dry ingredients and mix on medium speed for about 2 minutes.
- Slowly pour in the boiling water and mix until incorporated.
- Stir in the Baileys Irish Cream.
Baking
- Pour the batter into the prepared sheet pan and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
Frosting
- Let the cake cool completely in the pan.
- In a bowl, beat the softened butter until creamy, then gradually add the cocoa powder and powdered sugar, alternating with the milk and Baileys. Mix until fluffy.
- Once the cake is completely cool, spread the frosting evenly across the top.
- Add sprinkles or chocolate shavings if desired.

Ensure the cake is completely cool before frosting. Adding a teaspoon of instant espresso powder to the batter can enhance the chocolate flavor.
