  • 1 pound ground beef (or turkey for a lighter option)
  • 6 slices bacon, cooked and crumbled
  • 1 small onion, diced
  • 2 cups frozen hash browns
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 4 large eggs
  • 1 cup milk

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a skillet over medium heat, cook the ground beef along with the diced onion, seasoning with salt and pepper. Cook until browned, about 5-7 minutes.
  • Stir in the frozen hash browns and crumbled bacon to the meat mixture.
  • In a separate bowl, whisk together the eggs and milk, adding a pinch of salt and pepper.
  • Grease a 9x13 baking dish and layer half of the beef-hash brown-bacon mixture at the bottom.
  • Sprinkle a layer of cheddar cheese, followed by the remaining meat mixture, and top with mozzarella cheese.
  • Pour the egg and milk mixture over the entire casserole.

Baking

  • Cover the dish with aluminum foil and bake for about 30 minutes.
  • Remove the foil and bake for an additional 15-20 minutes until the cheese is bubbly and golden brown.

Serving

  • Let cool for a few minutes, garnish with ketchup, mustard, or pickles, and serve.

Notes

You can substitute ground beef with turkey or a plant-based meat. Add bell peppers or spinach for added nutrition. For extra cheesiness, add more layers of cheese on top.
