  • 2 slices slices of your favorite bread sourdough, whole grain, or a classic white
  • 1 medium avocado ripe
  • 1/2 cup fresh mozzarella, sliced
  • 1 medium tomato, sliced
  • 1 tablespoon butter for grilling
  • to taste salt
  • to taste pepper
  • fresh basil leaves optional

Preparation

  • Cut the avocado in half, remove the pit, and scoop out the creamy green goodness into a small bowl. Mash it slightly with a fork, adding a pinch of salt and pepper for flavor.
  • Heat your skillet over medium heat. While it warms up, butter one side of each slice of bread generously.

Assembly and Cooking

  • Place one slice of bread, butter side down, on your skillet. Spread the avocado mash on the slice followed by layers of mozzarella and tomato. Add basil leaves if desired.
  • Place the second slice of bread on top, buttered side up, and cook for about 3-4 minutes until the bottom is golden brown and the cheese is starting to melt.
  • Carefully flip the sandwich using a spatula and grill the other side for another 3-4 minutes until it’s crispy and melty.
  • Remove from heat, cut in half or quarters, and enjoy the cheesy goodness.

Notes

Consider trying different cheeses or adding greens like spinach or kale for extra crunch. Serve with marinara or garlic aioli for dipping.
