Ingredients
  

For the Salad

  • 2 ripe avocados, diced Make sure they are ripe.
  • 1 large ripe mango, diced Ensure it's ripe for best flavor.
  • 4 cups fresh arugula
  • 1/3 cup pine nuts, toasted Toast for added flavor.

For the Honey-Lime Dressing

  • 2 tablespoons honey Maple syrup for a vegan option.
  • 2 tablespoons fresh lime juice Can substitute with lemon juice.
  • 2 tablespoons olive oil
  • Salt and pepper, to taste

Preparation

  • In a small bowl, whisk together honey, lime juice, olive oil, salt, and pepper until smooth.
  • Let the dressing sit aside to let the flavors mingle while you prepare the salad.
  • Toast the pine nuts in a dry skillet over medium heat for 3-5 minutes until golden brown and fragrant.
  • In a large bowl, combine fresh arugula, diced avocados, and mango. Gently toss to combine.
  • Drizzle the honey-lime dressing over the salad and toss gently until everything is coated.
  • Sprinkle the toasted pine nuts on top right before serving.

Notes

Store leftovers in an airtight container in the fridge for up to one day. Keep the dressing separate to avoid a mushy salad. Prepare the dressing a few days in advance and store it in the fridge. For variations, try adding cherry tomatoes or substitute arugula with spinach.
