Ingredients
  

For the bruschetta

  • 1 whole ripe avocado Make sure it's ripe for best creaminess.
  • 1 cup pomegranate seeds
  • 4 oz feta cheese, crumbled Can be substituted with goat cheese or mozzarella.
  • 1 baguette sliced
  • 2 tablespoons olive oil For drizzling on the baguette.
  • Salt and pepper to taste
  • Fresh mint leaves for garnish (optional)

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • Drizzle the sliced baguette with olive oil, sprinkle with salt and pepper, and place them on a baking sheet. Toast in the oven for about 5-7 minutes or until golden brown and crispy.

Making the Mixture

  • Scoop out the avocado into a mixing bowl and mash lightly with a fork. Season with salt and pepper.
  • Fold in the pomegranate seeds and crumbled feta, mixing gently.

Assembly

  • Once your baguette slices are toasted, remove from the oven and let cool slightly.
  • Top each slice with a generous spoonful of the avocado mixture.
  • If desired, add fresh mint leaves for garnish.

Notes

Best enjoyed fresh. Store any leftover avocado mixture in an airtight container in the fridge for a day with a squeeze of lemon juice to slow browning.
