Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, whisk together the dry ingredients: flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  • In another bowl, beat the granulated sugar and brown sugar until light and fluffy, then add the eggs one at a time, mixing well.
  • Slowly drizzle in the vegetable oil and vanilla extract, mixing until well combined.
  • Gradually add the dry ingredients to the wet ingredients, stirring just until no flour streaks remain.
  • Gently fold in the diced apples and chopped pecans.

Baking

  • Pour the batter into a greased 9×13-inch baking pan and bake for about 40-45 minutes.
  • Check for doneness by inserting a toothpick into the center; it should come out clean.
  • Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack.
