  • 2 large eggs
  • 1 teaspoon vanilla extract

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a bowl, whisk together the flour, baking soda, cinnamon, and salt. Set aside.
  • In another bowl, combine the oil, sugar, eggs, and vanilla. Mix until well-blended.
  • Gradually fold in the flour mixture until just combined.
  • Add in the diced apples and nuts, gently stirring until everything is incorporated.

Baking

  • Pour the batter into a greased 9x5-inch loaf pan.
  • Bake for about 60-70 minutes, or until a toothpick comes out clean.
  • Allow to cool before slicing and serving.

Notes

Mix different apple types for depth of flavor and feel free to experiment with spices like nutmeg or cardamom. Store leftovers in an airtight container at room temperature for up to 3 days. Can freeze for up to three months.
