  • ½ cup butter, softened
  • 1 cup sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp milk for an extra soft cookie

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
  • Beat in the egg and vanilla extract until well combined.
  • In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  • Gradually add the dry mixture to the wet ingredients and mix until just combined.
  • If time allows, refrigerate your dough for about 30 minutes.
  • Scoop out tablespoon-sized amounts of dough and roll them into balls. Place them on a baking sheet lined with parchment paper, spacing them about 2 inches apart.
  • Bake for 8-10 minutes, or until they’re lightly golden along the edges.
  • Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

Feel free to add lemon zest, almond extract, or chocolate chips for variation. The secret to soft cookies is to pull them from the oven slightly underdone.
