Ingredients
  

For the Aji Verde

  • 1 cup fresh cilantro leaves Wash before use
  • 1 piece jalapeño pepper, seeds removed For a milder kick
  • 2 cloves garlic, minced
  • 1 tablespoon lime juice Use fresh-squeezed for best flavor
  • 1/2 cup mayonnaise
  • 1/4 cup Greek yogurt Can substitute with more mayo
  • to taste salt
  • to taste pepper

Instructions
 

Preparation

  • Gather your ingredients: cilantro, jalapeño, garlic, lime juice, mayonnaise, Greek yogurt, salt, and pepper. Don’t forget to wash your cilantro.

Mixing

  • Combine the cilantro, jalapeño, minced garlic, and lime juice in a food processor. Pulse until finely chopped.
  • Add the mayonnaise and Greek yogurt. Blend until smooth, scraping down the sides of the processor as needed.
  • Season with salt and pepper. Blend one last time and adjust seasonings to your liking.
  • Transfer to a serving bowl.

Notes

For an extra twist, add a splash of olive oil or a dollop of sour cream. Store the sauce in an airtight container in the refrigerator for up to a week. Feel free to substitute cilantro with parsley if desired.
