Base Ingredients

  • 1 head iceberg lettuce, chopped
  • 2 cups chopped fresh spinach

Vegetables

  • 1 cup cherry tomatoes, halved
  • 1 cup diced cucumbers
  • 1 cup shredded carrots
  • 1 cup green onions, sliced

Protein and Dairy

  • 1 cup cooked bacon, crumbled Optional; can substitute with grilled chicken or roasted chickpeas.
  • 1 cup shredded cheese Cheddar or your favorite cheese.

Dressing

  • 1 cup your favorite dressing Ranch or blue cheese work great!

Preparation

  • In a large glass bowl, layer the chopped iceberg lettuce as the base.
  • Sprinkle the chopped fresh spinach on top of the lettuce.
  • Layer the halved cherry tomatoes and diced cucumbers next.
  • Add the shredded carrots on top.
  • Crumble the cooked bacon over the carrots.
  • Add the shredded cheese on top.
  • Finally, sprinkle the sliced green onions and drizzle your favorite dressing.

Notes

Make ahead by preparing a few hours in advance, just keep the dressing separate. Feel free to add layers with beans, bell peppers, or avocados. Store leftovers in an airtight container for up to 3 days.
