Ingredients

For the eggs

  • 6 large large eggs Fresh eggs work best.

For the marinade

  • 1 cup soy sauce Can substitute with tamari for gluten-free.
  • ½ cup water
  • 2 tablespoons sugar Will dissolve in the marinade.
  • 1 tablespoon sesame oil
  • 2 pieces green onions, chopped Adds freshness to the marinade.
  • 1 teaspoon garlic, minced (optional) For a garlicky kick.

Instructions

Preparation

  • Place the eggs in a pot and cover them with water. Bring the water to a boil, then lower the heat and simmer for about 7 minutes for perfectly soft-boiled eggs.
  • Once done, transfer the eggs to an ice bath to stop the cooking process.
  • In a bowl, combine the soy sauce, water, sugar, sesame oil, and green onions. If using, add minced garlic. Stir until the sugar dissolves completely.
  • Once the eggs have cooled, gently tap each one to crack the shell, then peel them carefully.
  • Place the peeled eggs in a container and pour the marinade over them, ensuring they’re fully submerged.
  • Cover the container and let them marinate in the fridge for at least 4 hours, preferably overnight.

Serving

  • Once ready to serve, slice the eggs in half to reveal their golden yolks that absorb all the flavors.
  • Mix everything together for a visually inviting presentation.

Notes

Store leftover Mayak Eggs in the marinade in a sealed container in the fridge for up to a week. Feel free to add chili flakes for heat or sesame seeds for crunch.
