Strawberry Shortcake Cupcakes

Everyone’s favorite summer dessert in cupcake form! Baked from scratch, Strawberry Shortcake Cupcakes are made with a soft vanilla cake, filled with sweet strawberry compote, and topped with a light and fluffy stabilized whipped cream frosting.

Ingredients:

For the Cupcakes:

  • 1 ½ cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 ½ teaspoons vanilla extract
  • 1/2 cup whole milk

For the Strawberry Filling:

  • 1 ½ cups fresh strawberries, finely chopped
  • 2 tablespoons granulated sugar
  • 1 teaspoon lemon juice

For the Whipped Cream Frosting:

  • 1 cup heavy whipping cream, cold
  • 3 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract

For Garnish:

  • Fresh strawberry slices

Directions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.
  2. Mix Dry Ingredients: In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  3. Cream Butter and Sugar: In a large bowl, beat softened butter and granulated sugar until light and fluffy, about 2–3 minutes.
  4. Add Eggs and Vanilla: Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  5. Combine Wet and Dry: Gradually add the dry ingredients to the wet mixture, alternating with milk. Mix until just combined—do not overmix.
  6. Bake: Divide batter evenly among the cupcake liners, filling each about 2/3 full. Bake for 18–22 minutes or until a toothpick inserted into the center comes out clean. Cool completely on a wire rack.
  7. Prepare Strawberry Filling: In a bowl, combine chopped strawberries, sugar, and lemon juice. Let sit for 15–20 minutes until juicy.
  8. Make Whipped Cream: Beat cold heavy cream, powdered sugar, and vanilla extract until soft peaks form.
  9. Assemble: Use a small knife or cupcake corer to remove the center of each cooled cupcake. Spoon strawberry filling into each cavity. Pipe or spoon whipped cream frosting on top.
  10. Garnish & Serve: Top with fresh strawberry slices and serve immediately, or refrigerate until ready to serve.
